Easy Apple Cake
This Apple Cake is the perfect weekend breakfast, it’s fast and easy to prepare and sweet and indulgent while being packed with apples. It only has a couple simple ingredients that you probably already have in your pantry and fridge, so gather them together and get baking! Growing up and living in the Northeastern United States, we went apple picking every fall, coming home with bags and bushels of perfectly sweet and delicious apples of all sorts. This is the perfect apple recipe to use some of your beautiful bounty. It’s not too sweet and it is flexible to the type of apple used. We’ve had this with super tart Granny Smiths to super sweet Macintosh and it’s good with them all.
This recipe makes a small 8 x 6 inch cake, so double this up if you have a hungry family on your hands and make a full 9×13 baking dish full.
The sliced apples on the top are completely optional, but I think they are a fairly quick and easy way to make this cake look special.

Preheat oven to 180C / 355F

Peel the 4 apples, chop one into medium sized chunks, thinly slice the last apple(this will go on top)

In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.

Into the dry ingredients, add in the melted butter, milk and egg.

Mix to combine.

Add in the 3 apples you cut into chunks. Stir to combine and coat the apples.

Transfer the batter to the baking dish

Take the sliced apple and lay over the top of the cake. If you want, sprinkle about 1 tsp of sugar over the top.

Bake for 50 minutes, until it is firm to the touch and golden brown.
