Frozen Grapefruit Lime Gin Cocktail

Ingredients
  • 8 ounces Frozen Grapefruit Juice
  • 1 Lime (Inner flesh including juice)
  • 1/4 Lime Zest
  • 2 ounces Gin
  • 1 tablespoon Simple Syrup (if you like it a little sweeter add a second tablespoon)
Instructions
  1. Freeze your grapefruit juice at least a couple hours in advance (You can keep it for a long time in the freezer, so might as well stash some there for a rainy day ;)
  2. Zest 1/4 of your lime, then slice it into 4 sections and cut out the flesh
  3. In a blender, combine the frozen grapefruit juice, zest, lime wedges, and 2 oz. gin (if using). Blend until smooth
  4. Taste a little and if it is not sweet enough, add in 1 TBS of simple syrup. Blend to combine.
  5. Taste it again, if it still isn’t sweet enough, add the remaining 1 TBS of simple syrup and blend for a few seconds. (This will vary based on how sweet your juice is and your personal preference., so start small and don’t be afraid to stop and taste it)
  6. Pour into glasses(bonus points if they are chilled). Enjoy!

With Fourth of July weekend upon us, don’t we all deserve a refreshing chilled cocktail that we can make at home and enjoy while the warmer weather moves in. This recipe can easily be doubled, just make sure to enjoy it immediately or store it in the freezer, A little pulse in the blender should revive it to it’s original glory!
